Fresh Nigerian Dwarf goat milk, frozen the day it's milked. Higher butterfat than anything in a grocery store. Pickup at the farm in Great Falls, SC.
A Half Gallon of fresh goat milk from our Nigerian Dwarf herd, frozen within hours of the milking stand. Higher butterfat than commercial dairy goat milk — for drinking, soap making, baking, or hand-feeding livestock.
Goats milk every twelve hours, whether we have customers for it or not.
What we don't drink, we freeze — within hours of the milking stand. Raw. Not pasteurized, not homogenized, nothing added or taken away. We pour it warm out of the bucket through a fine filter, into food-grade Half Gallon containers, and into the deep freezer.
Nigerian Dwarfs are a small breed bred for high butterfat. Their milk runs 6 to 10 percent butterfat — almost double what's in commercial goat milk and richer than most cow's milk. That's why our customers tend to fall into one of four camps:
Move from freezer to fridge the night before. It thaws slowly that way and the cream stays incorporated. In a hurry: set the container in cold water — never hot, never the microwave. Hot water cooks the milk proteins and you'll end up with curds.
Once thawed, shake well and use within 5 to 7 days. Refreezing changes the texture a little but doesn't hurt anything if you need to.
For soap: pull from freezer, let it thaw to a slush (not full liquid), then stir in your lye. The icy slush keeps the lye from scorching the milk to brown.
Raw goat milk has not been pasteurized. We follow South Carolina's rules for on-farm sale — ask us if you have questions about labeling. People drink ours every day, but you do so at your own discretion. Sold for animal consumption only.
